I hope spring is finally here to stay because I am totally craving the warmth by now. Our Whistler, BC skiing trip (I’ll be sharing the trip soon) was a perfect end to a great winter filled with snow!

When we traveled back to Utah we were welcomed with gloomy skies and rain. I was a little disappointed, hoping to come back to spring. Thankfully the next day was sunny and all the trees are blossoming outside our windows!

Today I thought I’d share with you this beautiful linen dress from Zara. Its a perfect staple item to have in my spring and summer closet.

It is so light and flowy, I feel like I am wearing a nightgown! Plus it has pockets!!! Everyone needs a dress with pockets! Also can we talk about how adorable this pretty pink room is? I am begging Preston to let me paint one of the rooms in our house pink, one day.

I have been the laziest with my hair lately. I am all for doing something fast and running out the door. I decided to dress up my lazy dos a little bit, adding a simple velvet ribbon made all the difference.

In this outfit I felt a little bit like Wendy from Peter Pan, which is one of my favorite childhood Disney Movies! Has anyone seen the new Beauty & The Beast yet? I still have yet to see it, we have planned a couple of nights to go out to see it and have been so tired from our trip we end up just cuddling up at home and watching a movie! This week, we’ll make it happen!!

We ate way too much chocolate while we were in Canada! It is just so amazing there! I’ve been craving sweets everyday since we’ve been home. So last night I caved and made some “Healthy” Cookie Bars. As healthy as you can be with baking ha! They were so yummy and delicious I had to share the recipe with you! I just made them last night and Preston and I ate half the pan already! (so embarrassing I know)

Healthy PB Chocolate Chip Oatmeal Bars

Ingredients:
½ cup creamy peanut butter
¼ cup coconut sugar (or brown sugar)
¼ cup honey
1 large egg, room temperature
2 tablespoons melted coconut oil
1 teaspoon vanilla extract
1 cup old fashioned rolled oats
¾ cup whole grain flour *(I used Gluten Free Flour instead and it was amazing)*
¼ teaspoon salt
½ teaspoon baking soda
½ cup chocolate chips

DIRECTIONS:
Preheat oven to 350˚F and grease an 8×8 inch baking pan with cooking spray.
In a large bowl, mix together the peanut butter, coconut sugar, honey, egg, coconut oil, and vanilla until fully combined.
Add in the oats, flour, salt, baking soda and mix until combined.
Add the chocolate chips and fold them into the batter.
Spread the batter into the prepared baking pan. Bake for 15-20 minutes until the top is set and lightly golden brown. *Don’t over-bake or else they will be too dry!
Allow to cool in the pan, then cut into bars and devour!
