Mini Cadbury Egg Chocolate Cookies

Happy almost Easter! I love Easter! In my family we always have a big family dinner with tons of yummy food and desserts! I grew up with the tradition of decorating eggs, waking up to baskets full of candy and of course dressing up and going to church!

Who doesn’t LOVE MINI CADBURY EGGS?! I am addicted! I can’t leave the store without buying a bag…or two. It is so bad. But they are just so so yummy! I am a total sucker for treats, sweats, desserts, anything with sugar in it…

These cookies are so amazing! I have made them 3 times in the past 3 weeks already! What is better than Cadbury eggs in COOKIES!? Chocolate cookies for that matter! This recipe is just perfect, they stay fluffy and soft even days later of making them! Run to the store and grab your cadbury eggs quick, because you’re going to want to taste these!

Mini Cadbury Egg Chocolate Cookies

  1. 2 sticks of butter, softened
  2. 1 cup granulated sugar
  3. 1 cup packed brown sugar
  4. 2 large eggs
  5. 1/2 cup unsweetened cocoa
  6. 1 Tbsp vanilla
  7. 1 teaspoon salt
  8. 1 teaspoon baking soda
  9. 2 1/4 cups flour (I use gluten free flour and its great too)
  10. 1 bag Mini Cadbury Eggs

  1. Preheat oven to 375 degrees.
  2. Combine sugars and butter. Mix well.
  3. Add eggs and cocoa, mix again.
  4. Add salt, soda, vanilla and flour.
  5. Then add your Mini Cadbury Eggs. You can crush them, or I prefer to fold them into the dough.
  6. Roll into cookie dough balls. Spray cookie sheet with non stick baking spray, place cookie dough balls on the sheet about an inch apart from each other.
  7. Bake for 8-9 minutes. They are best if they are still a little bit soft.
